Recipe:
- 1 1/2 cups Bomba or Calasparra rice
- 2 cups chicken broth
- 1/2 cup dry white wine

- 1 green pepper, chopped
- 1 cup chopped tomatoes
- 1 teaspoon cooked paprika

Instructions:
Wash rice in cold water and set aside.
Heat the olive oil over medium heat in a large pan or paella pan. Add the onion and garlic and fry until the onions are transparent.
Add the chopped peas and continue to cook for another 5 minutes.
Add the chopped tomatoes, cooked peppers and saffron threads and mix it all together. Cook for a few minutes until the tomatoes begin to burst and release their juices.
Add white wine and chicken stock, bring to the boil.
When the water boils, put the washed rice in a pot and mix everything so that the rice is evenly distributed.
Reduce the heat to medium-low and let the rice cook for about 15-20 minutes or until the liquid is absorbed.
While the rice is cooking, clean the shellfish and set aside.
After the rice has cooked for 15-20 minutes, add the fish to the pan and gently stir into the rice.
Cover the plate and cook for a further 10 minutes or until the fish is cooked through.
When the fish is cooked, remove the pan from the heat and let it stand for a few minutes.
Serve the paella with a slice of lemon on the side to create the top.
Tips:
Use a paella pan if you have one, but if not, a large pan will work well.
If you can’t find Bomba or Calasparra rice, use short grain rice that absorbs water well.
Be sure to rinse the rice under cold water before cooking to remove any remaining starch.
If you don’t like seafood, you can make a meat-based paella with chicken, offal or pork.
Do not over-stir the rice while it is cooking, as this will release excess starch and make it mushy.
Use fresh fish for better flavor and texture.
Do not overcook shellfish or they will become tough and rubbery.
